Healthy Broccoli Salad Side Dish

 

Hereโ€™s my spin on a broccoli salad!

It seems to be at every potluck so why not have a solid recipe in your back pocket?! I love taking classic dishes and putting a unique spin on them. This broccoli salad recipe is no different. I never have raisins on hand (and I honestly donโ€™t love them), so I swapped those out for chopped dates. Add in some red onion and crispy bacon for a savory crunch! Viola! A yummy side dish to share that is simple, quick, & easy.


Ingredients:

5 C broccoli

8 slices bacon

1/3 C Red onion

1/3 C Pitted Dates

3/4 C Mayo (my go-to is the Avocado Oil Mayo from Primal Kitchen)

1/4 C Sprouted Pumpkin Seeds

Salt & Pepper to Taste

Method:

  1. Cook up the bacon your preferred method. I like to do mine in the oven for even cooking and easy cleanup! To do so: Line a baking sheet with parchment paper. Arrange the bacon so that itโ€™s barely touching. Put it in an oven at 350 degrees for 15-20 minutes until crispy. Set aside.

  2. Chop broccoli into bite-sized pieces. You can include some of the stalks too for extra crunch. Put that into a medium-sized mixing bowl.

  3. Dice up the red onion and add it to the bowl.

  4. Chop the dates and add them to the bowl.

  5. Chop the bacon into bite-sized pieces and add it to the bowl.

  6. Add your mayo and sprouted pumpkin seeds to the bowl and mix.

  7. Add salt and pepper to taste.

  8. Chill for at least an hour before serving. Enjoy!
